Photographer’s Note
Here we see some sort of dumping of some kind. The steam is what attracted me in this market, then I noticed the folded hands in the darkness. It was too dark to see a face.
Many major cities of the world have a China town and Japan is no exception. My impression is that the closer you are to China, the more authentic your China town. This could also be that the closer you are to China, there is more shared culture in your country, or there are simply more Chinese and certainly more travel to/from China.

Perfect exposure inorder to portray the steam so effectively. The DOF is interesting and so is the typical, traditional chinese lady way of placing their hands. Simply Chinese!! Great shot! Regards.

I agree with your comments -- I think the darkened background that just barely shows the hands is great. The steam and low light levels add to the atmosphere. I think your cropping helps to focus on the main subject, yet keep the picture-in-a-picture of the hands. Nice job.

Yes, the white are steamed stuffed bun, the brown in the right are rice dumpling.
Both are very delicious if well made.
