Part 3 (of 5) - From Tuna to Sushi.
Once the whole tuna is delivered to a nearby stall, the stallholder starts cutting it up. I observed several stallholders in the process, and they seem to make cuts with great care and precision, using a very long knife. The fish is first halved, and then quartered as shown. It resembles meat (a side of beef) more than fish, it seems to me.
