Photographer’s Note

In the middle of Georgetown there are the mee goring stalls right at the roadside. Mee goreng is an Indian inspired stir-fried noodle dish, but also many Malays do it. There are countless versions of it. The taste varies not only from cook to cook but also to which ethnic group he belongs.

You eat these mee goring for breakfast, lunch, dinner or simply as a snack, it’s not expensive but filling. Healthy, that depends how much oil and MSG is used.

When the taste is right? That depends on you, but I would say when the dish is a perfect balance of salty, spicy and dry. Some like it hotter, so you simply add fresh chilies or eat it with chilies sauce. It’s not the national dish of Malaysia, but you can get it at any street corner – o.k. almost.
