Photographer's Note

After all that dancing i've been putting you through lately, i thought it would be a nice idea to stop and have some kurtos kalacs, dessert usually served at fairs around here, along with mici and beer.

A delicacy made by Szkely people, mostly living in the counties of Harghita, Covasna and Mures in Romania, the taste of kurtos kalacs lies somewhere between sweet bread and doughnut.

First, a thin dough is prepared and rolled around a
3-4" metal rod which is baked over fire with the cylinder rotating. When the dough is lightly brown and done, it is rolled in sugar and/or cinnamon (or any other different condiments as a matter of fact like walnut, poppy-seed or vanilla) and slipped off the rod. Afterwards it is wrapped in clear wrapping and ready for delivery.

* please check WS for more detailed views on the 'making of' kurtos kalacs (the first WS image would have been my choice to post - but due to some slightly over-exposed parts - i decided for this one - hope i was right)

** here is a link to a YouTube movie that clearly illustrates the technological process of kurtos kalacs making

*** and another link, for french speaking people (sorry, but i couldn't find any related webpage with info in english) with further details on kurtos kalacs (in french)

actually my point is: if you ever get the chance to taste kurtos kalacs - don't miss it whatever happens!!! - grab the opportunity with both hands - you'll love every bite of it, i promisse you

enjoy! :)
