Photographers Note
Those vendors are common throughout Turkey. They are selling Turkish bagels , called simit . They are also called "Gevrek." Simit has been a popular part of Turkish culture for 600 years. People looking for something fast and inexpensive to eat will seek out a simit seller. Many people working in offices have a breakfast of simit and tea before starting work. Simit is also eaten while drinking salep, a beverage made of pulverized roots from certain Turkish orchids.
Simit was first baked for Janissaries (troops of the Ottoman Empire) in the 14th century, but the public liked it so much it became a part of Turkish culture. Simit is fairly easy to make. The dough is kneaded in machines and shaped into rings, dipped in water sweetened with a little sugar, and sprinkled with sesame seeds before baking. Although you might see different types of simit in different regions of Turkey, the basic ingredients are the same.

İlk defa 14. yüzyılda Osmanlı ordusunda görev yapan yeniçeriler için yapılmış, ama zamanla Türk yiyecek içecek kültürünün bir parçası haline gelmiş.
Simit hamuru (hamur makinelerinde) hazırlandıktan sonra, el ile bilinen şeklini alır; şekerli veya pekmezli suya batırıldıktan sonra susama bulanır ve fırına atılır.
Türkiyenin farklı yörelerinde, farklı çeşitlerine rastlasanız da, kullanılan malzemeler hep aynıdır.

Mesut Bey, harika ve capcanlı bir konu gene.. Bu TE ne garip bir yer, insan bir süre giremediyse (teknik nedenlerle), sanki evinden, işinden , mahallesinden ayrı kalmış gibi özlüyor. saat 06:51 şu an. Biraz sonra içeri gidip kahvaltımı edecektimki bu fotografı gördüm ! şimdi ne yapacağım. doğru fırına gidip simidimi alıp beyaz peynirimle beraber kahvaltımı edeceğim. Fotograf için söylenecek daha ne olabilir. Ellerinize sağlık. selamlar.

Hi Mesut,
You have already show this bagel, very similar to our bagels from Krakow. Nice colourful everyday scene from the market. Only the view of the women is Turkish - the men look like everywhere. Nice yellow fruit - melon?

The receipt and the color of this preparation put to me in appetite:) the image alive, is coloured and really superb. I have the impression that there is a deformation, the image is lengthened in height. This there does not remove anything with the success and the interest which this image causes. Congratulations.

Merhaba Mesut,
Very good "daily life" shot, where we can see the apparently delicious products on sale and the peaceful activity of the market. You managed to find a really nice compo and that along with excellent colours, make the image as attractive as it is effective as documentary. We have some cakes that are a bit alike some of those, but sadly you can't find them so easily as you find them in Turkey. I remember well their aroma in the streets...
