Tsukiji Fish Market

As I was wandering around this impressive fish market, which handles more than 400 different types of seafood from tiny sardines to 300kg tuna, I was fascinated by this man, with the stoutness and the attitude of a sailor. He was very bold and heavy chain smoker, but became delicate and meticulous when he sliced his fish.

I wanted to photograph the different process of what happens to a tuna, from whole fish to sushi pieces. But at the moment he inclined his head, its headband gave me the impression that he had lost his head, just like its fish.
