Photographer's Note

Spices are a way of life in Tunisia! There are spice vendors in every neighbourhood and multiple vendors in the souks of central medina in each city. I was fascinated by neatness of this collection of mixed spices & herbs on display at a colourful traditional market in a vibrant old quarter of Sousse with layers of history.

Spices are heaped in large bins, burlap bags, tall urns, hand-painted ceramic bowls, even plastic buckets and are purchased and used in volume, not in pinches.
It's a show of aromas and voices..
